Y’all. These cookies are DELICIOUS. I’m not trying to yell at you, I’m just trying to make sure you understand just how good they really are. I love a good cookie, and these have automatically jumped into my top 5. Maybe even my top 3.
Salted Chocolate-Caramel Rounds. Doesn’t that just sound intriguing and tasty? I have seen salted caramel flavored goodies popping up a lot lately. One of my favorites was the salted caramel ice cream that Blue Bell came out with a little while back. Mmm, it was simply delicious. Anyways, for me, adding chocolate into the salted caramel mix is just perfect. Thank you, Better Homes and Gardens, thank you. You have outdone yourself with this recipe. So, let me show you what this fuss is all about.
See all of that candy up there? Oh, this is just so exciting. There is a Rolo in the middle of each of these cookies! If you aren’t familiar with Rolos, they are one of Hershey’s ingenious creations – chewy caramel covered in milk chocolate. But, before we get to that part of the recipe, we need to mix up the cookies. First, I combined my dry ingredients.
Next, I creamed the butter and sugar together and added in the eggs and vanilla.
Last, I combined the wet and dry ingredients, and we have cookie dough! At this point, I could already tell that these cookies were going to be top notch. (Because I couldn’t stop eating the cookie dough.)
I let the cookie dough chill for about an hour to make it a little easier to work with. Once the dough was ready, I rolled it into about 1 1/2 inch balls. I placed a Rolo in each piece of cookie dough and reformed it back into a ball. Time to bake!
When the first batch of cookies came out of the oven, there was a bulge in the middle and you could tell there was a piece of candy in the cookie. I wanted the caramel in the middle to be a surprise to unsuspecting cookie eaters. So, as I worked up the next batches I learned how to shape the cookie dough so that the Rolo would spread out evenly throughout the cookie. Basically, I piled the cookie dough up on top of the candy, and the weight of the dough squished the Rolo while baking. Whatever works!
Now for the topping! As you can probably tell from this post and the Chocolate Chip and Peanut Butter Cookies I made a for week 13, I have become a big fan of toppings on cookies. It is such a simple and tasty way to dress up a cookie. If you are hosting a party and serving cookies – drizzle some melted chocolate or caramel on top and people will be raving for days. It can be a little messy, but it’s so worth it. Go ahead, give it a try! 🙂
These remind me of a super-secret family recipe I have for caramel brownies, except in cookie form. Both are so good.
I couldn’t get a really good shot of the inside of the cookies, so the one down below will have to do. Hopefully it will give you an idea of the caramel goodness inside these tasty treats.
I somewhat reluctantly decided to send most of these cookies to work with Brian. I knew it was the right thing to do. 1. I like sharing. 2. It’s much better for my health. (This recipe made about 40 cookies!) But, that doesn’t mean it wasn’t hard to part with these.
Ok, it really wasn’t that tough to share these, but I’m pretty sure they have made it into my top 2 favorite cookies by now.
