Sweet Glazed Cherry Pie – Week 19

Cherry pie is such a classic dessert.  Classy like June Cleaver in her high heels and pearls pulling a pie out of the oven before the family comes home for the day.  (Anyone else ever watch Leave it to Beaver? 😀 )

This cherry pie was my first pie to make for The Baking Challenge, and it turned out to be very scrumptious!  Woohoo!  I was pleased to find that this recipe was quick and simple to put together.  Since it was so easy and tasty, I think I will add it to my bag of tricks for entertaining.  I don’t do a whole lot of entertaining, but it’s still fun to plan, right? 🙂

Sweet Glazed Cherry Pie | thelittlebluemixerFor the pie filling, I used both frozen cherries and a can of cherry pie topping.  I folded the frozen cherries into a bowl of sugar, cornstarch, and vanilla and let them sit for about an hour.

While the mixture sat, the cherries thawed and the sugar and cornstarch created a nice syrupy sauce.

Now that we have the filling pretty much finished – see how easy that was? – it’s time to work on the crust.  If you are in a pinch for time, you can always use a store bought crust, but making your own really doesn’t take too much time.  Give it a try one day!

The crust is made of flour, salt, crisco, butter, and ice water.  First, cut together the dry ingredients with the butter and crisco, and then slowly add ice water until your dough sticks together.  It’s that simple!

It’s time to fill the pie!  This cherry pie recipe had a fun twist to it – adding almonds.  I sprinkled about 1/2 cup of sliced almonds in the bottom of the pie and poured in the cherry mixture.  To finish up, I spooned the can of cherry topping on top and added the top pie crust.  Ready to bake!

Adding a little icing and almonds on top will spruce things right up. 🙂

Especially around the holidays at home, we always have pie for dessert.  However, there is never just one pie.  No, that wouldn’t be right.  I can’t even remember all of the different kinds that show up on the dessert table.  What I do know though, is how delicious everything is.  Mmm.
