Brownies. Friends coming over for dinner? Going to a potluck? Having a birthday party? Just want to something sweet? Brownies.
These are such a great go-to dessert. They are chock full of chocolate and you can add in so many different flavors to make your batch a little unique. There are a ton of different recipes out there. In fact, I’ve made several different varieties in just the last year and a half here at The Little Blue Mixer! Rocky Road, Cream Cheese Marbled, Fudge Ripple Pecan, Fudgy Saucepan Brownies, and the list will likely go on in the future!
So, why and I making them again right now? Well, this recipe is a special one. Growing up, we had a kid’s baking cookbook that I vividly remember. I can’t seem to recall the name, but I bet I could walk into my parents house right now and find it on the kitchen shelf. These brownies were our go-to recipe. It was so fun to make these with Mom. Now I think I know why she let me help with this recipe… it’s really easy! So, parents, here you go! Make these with your children! I promise you’ll have a blast!
Alright, here is the step-by-step!
This is a one-bowl recipe. My fav. Pour a six ounce bag of chocolate chips into a medium microwavable bowl and add in 4 tablespoons (1/4 cup) of butter. Microwave for 30 seconds.
If you are new to melting chocolate via the microwave, it’s important to note that you need to stir the mixture often! This is what it looks like after 30 seconds.
And with just a little stirring, we have…
Pop the bowl back in the microwave for 30 more seconds.
Stir some more and we have smooth, buttery chocolate. That was a total of 1 minute in the microwave. If your chocolate still isn’t melted, pop it back in for a few more seconds and stir again.
Pour in 3/4 cup of sugar.
Give it a stir…
Add in 2/3 cup of all purpose flour. (You don’t have to stir this in all of the way just yet.)
Pour in 1/2 teaspoon vanilla…
1/4 teaspoon baking powder…
1/4 teaspoon salt…
…and finally, two eggs.
Give it a good stir. I switched over to a wooden spoon at this point since it was a bit sturdier than my spatula. If you prefer, you can make this recipe with a mixer.
I chose to add in 1/2 cup of chopped pecans. If nuts aren’t your thing, go right ahead and leave these out.
Last, but definitely not least, stir in 1/2 cup of semi-sweet chocolate chips.
Pour the batter into a greased 8x8x2 inch pan, making sure to spread it out evenly. As always, I like to add a few extra chunks on top of mine. 😀
Alright! Bake at 350° for 30 minutes.

Perfect Fudge Brownies
- 1/4 cup butter
- 6 ounces semi-sweet chocolate chips
- 3/4 cup sugar
- 2/3 cup all purpose flour
- 1/2 teaspoon vanilla
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 2 eggs
- 1/2 cup chopped pecans
- 1/2 cup semi-sweet chocolate chips
- Preheat oven to 350°.
- Grease 8x8x2 inch pan. If desired, first line pan with aluminum foil and then grease foil.
- Melt butter and 6 oz chocolate chips in microwave. Alternate warming and stirring until chocolate is melted, about 1 minute.
- Stir in granulated sugar.
- Add in flour, vanilla, baking powder, salt, and eggs, and stir with wooden spoon until mixture is smooth.
- Stir in chocolate chips and chopped pecans, if desired.
- Spread batter evenly in prepared pan and sprinkle top with chocolate chips and pecans.
- Bake for 30 minutes or until center is set
- Let cool completely in pan on wire rack.
